Chickpea "Chicken" Salad

Ingredients

  • 2 cans Chickpeas, drained and rinsed
  • 1/2 cup Red Bell Pepper, chopped
  • 1/2 cup Celery, chopped
  • 1/2 cup Grapes, quartered
  • 1/2 cup Walnuts, chopped (optional)
  • 2 tbsp. Grated Parmesan
  • 1 tbsp. Lemon Juice
  • 2 tsp. Soul Seasoning
  • 1 tbsp. Dill Relish
  • 1/2 cup Mayonnaise
  • 1/4 cup Sour Cream
  • Salt and Pepper, to taste
  • Large Croissants, for serving

Instructions

  1. Add chickpeas to a bowl and mash with potato masher until desired texture
  2. Add rest of ingredients to bowl. Stir.
  3. Spoon onto halved croissants

Notes

  • Add walnuts for a little extra crunch
