Coconut Milk Chia Seed Pudding

Ingredients:

  • 2 cups canned coconut milk
  • 1/4 cup agave nectar
  • 1/2 tsp. vanilla extract
  • 1/2 tsp. salt
  • 1/2 cup black chia seeds
  • mixed berries
  • granola

Instructions:

  1. In a medium mixing bowl, whisk together the coconut milk, agave, vanilla, and salt until smooth.
  2. Add chia seeds and mix well.
  3. Cover bowl and refrigerate for 2 hours, stirring once halfway through refrigeration time.
  4. Stir well and scoop into bowls. Top with granola and fresh berries.
