Lentil Breakfast Sausage

Ingredients

  • ½ pound green lentils
  • 1 tsp ground sage
  • 1 tsp ground thyme
  • 2 tbsp light brown sugar
  • ½ tsp salt
  • 1 tsp crushed fennel seeds
  • ½ tsp crushed red pepper
  • ¼ tsp freshly ground black pepper
  • ¼ tsp garlic powder
  • ¼ tsp paprika

Instructions

  1. Cook lentils according to package instructions. Drain and rinse.
  2. Mix together spices/sugar
  3. Melt butter in skillet over medium heat.
  4. Add lentils to skillet. Add spice mix 1 ½ tsp at a time, stirring between. After half of the spice mix is added, stir in another pat of butter and ½ tbsp maple syrup. Mix into lentils.
  5. Add rest of the spice mix 1 ½ tsp at a time. Keep lentils over heat until dry/browned.
