Parmesan Orzo with Peas

Ingredients

  • 2 tablespoons butter or oil
  • 1 onion, chopped
  • 3 cloves of garlic, pressed or minced
  • 16 oz package of orzo
  • 1 32 oz container low sodium vegetable stock
  • 3/4 cup water
  • Zest and juice of 1 lemon
  • Salt and pepper, to taste
  • 1 1/2 to 2 cups frozen peas
  • 1 cup grated parmesan cheese

Instructions

  1. Melt butter or oil over medium heat in medium pot
  2. Add onion and saute until softened, about 3-4 minutes
  3. Add garlic and orzo and lightly toast for 1-2 minutes
  4. Pour in vegetable stock, lemon zest, and salt and pepper
  5. Cook uncovered stirring often and until all the liquid has absorbed into the pasta
  6. Add extra water as needed until orzo is cooked
  7. Add peas, lemon juice, and parmesan and mix until incorporated
  8. Heat until parmesan is melted and peas are heated through
