Ingredients
- 2 tablespoons butter or oil
- 1 onion, chopped
- 3 cloves of garlic, pressed or minced
- 16 oz package of orzo
- 1 32 oz container low sodium vegetable stock
- 3/4 cup water
- Zest and juice of 1 lemon
- Salt and pepper, to taste
- 1 1/2 to 2 cups frozen peas
- 1 cup grated parmesan cheese
Instructions
- Melt butter or oil over medium heat in medium pot
- Add onion and saute until softened, about 3-4 minutes
- Add garlic and orzo and lightly toast for 1-2 minutes
- Pour in vegetable stock, lemon zest, and salt and pepper
- Cook uncovered stirring often and until all the liquid has absorbed into the pasta
- Add extra water as needed until orzo is cooked
- Add peas, lemon juice, and parmesan and mix until incorporated
- Heat until parmesan is melted and peas are heated through
