Ingredients
- 1 onion (I like sweet onions)
- 2-3 carrots (depending on size)
- 2 cloves garlic
- 3 cups veggie broth (1 box)
- 3-4 Yukon gold potatoes
- ½ cup hot sauce (Frank’s; or more to taste)
- 1 jar salsa
- 1 package tortellini
- Salt, pepper to taste
Instructions
- Sautee onion and carrots until soft, about 7 minutes
- Add garlic and Sautee until fragrant, about 1 minute.
- Add veggie broth, hot sauce, salsa, and potatoes. Bring to a boil and cook until potatoes are done, about ten minutes.
- Add tortellini and cook until done (follow package instructions)
- If soup doesn’t have enough liquid, add water/veggie stock until desired level of brothiness is achieved.
