Tortellini Soup

Ingredients

  • 1 onion (I like sweet onions)
  • 2-3 carrots (depending on size)
  • 2 cloves garlic
  • 3 cups veggie broth (1 box)
  • 3-4 Yukon gold potatoes
  • ½ cup hot sauce (Frank’s; or more to taste)
  • 1 jar salsa
  • 1 package tortellini
  • Salt, pepper to taste

Instructions

  1. Sautee onion and carrots until soft, about 7 minutes
  2. Add garlic and Sautee until fragrant, about 1 minute.
  3. Add veggie broth, hot sauce, salsa, and potatoes. Bring to a boil and cook until potatoes are done, about ten minutes.
  4. Add tortellini and cook until done (follow package instructions)
  5. If soup doesn’t have enough liquid, add water/veggie stock until desired level of brothiness is achieved.
