Vegetarian Chili

Ingredients

  • Oil/butter (for cooking vegetables)
  • 1 large onion
  • 2 red bell peppers (seeded and diced)
  • 2 green bell peppers (seeded and diced)
  • 1 large jalapeno (seeded and diced)
  • 6 cloves of garlic
  • 2 cups pale beer
  • 2 28 oz cans crushed tomatoes
  • 2 cans black beans
  • 2 cans dark red kidney beans
  • 2 tbsp cumin
  • 4 tbsp chili powder
  • 1 tbsp cayenne (or to taste)
  • 1 tbsp brown sugar
  • 1 can refried beans
  • 2 bay leaves
  • Mushroom broth powder or mushroom seasoning from trader joe's to taste
  • salt/pepper to taste

Instructions

  1. Heat oil/butter over medium heat. Add onion and garlic. Add red and green bell peppers and jalapenos. Add a pinch of salt and cook until the peppers release their water.
  2. Deglaze with beer. Add crushed tomatoes, black and kidney beans.
  3. Add spices, sugar, and salt/pepper to taste.
  4. Stir in refried beans.
  5. Add 2 bay leaves and mushroom seasoning.
  6. Transfer to crock pot for 2 hours or until ready to serve.
  7. Serve with sour cream, Frito’s, shredded cheddar, and green onions

Notes

  • Makes a TON. Halve the recipe if not intending to serve a lot of people/freeze. But, freezes well.
